Rooster Cogburn's Corn Dodgers (aka hot water cornbread)

This one is almost to simple to post but has great taste and many various possibilities.  Legend has it that when John Wayne told the Asian dude in "True Grit" to put about 50 or so "corn dodgers" in the saddle bags, that this is what he was referring to and since he's passed on, then you'll have to take my word for it.

Basic Ingredients are:
1 cup of Aunt Jemima "Self Rising" Cornmeal (see attached pic)
1 cup of Boiling Water

Put self-rising cornmeal in a bowl and pour in boiling water.
Mix thoroughly and then pat into small patties approx. 3/8" to 1/2" thick.
Fry in hot canola oil (or shortening of your choice) until golden brown.

Eat plain, use to sop up pot liquor or with butter/oleo.

Variations are unlimited - - - you can add Tony Chachere's seasoning, chopped onions, chopped peppers (jalapenos work real well here) or any other seasoning of you choice.
