Free Bird Meller Style

I wanted to do something special for my friends down the street that do so much for us during the year and so much for the community also.  He's a contractor and has bailed me out of situations many times plus he'll just dropby and have his worker sweep off our roof.  His wife is just a sweet lady and helps with all the functions and checks on those who might need something.  A very small reward but I wanted to do something so I'm fixing them a "fully loaded" Beer Can Turkey.

I set everything out the night before for Wednesday morning's cook and and also for our T-day bird the following day.

Took about an hour to wash, trim, inject, season, start giblets boiling, get charcoal going and sitting on the beer can throne.

Got him on the pit around 6:45am and after an hour, I added more Kingsford and apple chips and spritzed it good with Tony's Creole Butter Injection and Apple Juice.

Added more Kingsford and Apple chips at 2 hours but did not spritz this time.

Three hour bed check and will add charcoal only and spritz.  I may checked the thigh and breast temp with my "Apachetronics complimentary meat thermometer" and they were around 126.  It sure is purdy but purdy don't mean safely cooked.  Will check temp and possibly baste and add more Kingsford at 4 hours.

Slightly over 4 hours in the ECB, sitting on a big Fosters with lots of Apple smoke around it and the temps were only 148 so I added some more charcoal and closed her up until it had been on fore 5 hours and 15 minutes.  Temp was 164.7 in a couple of places so off it came.

I have learned one thing on this cook and that's to put more kingsford on each time and limit your lid lifts to one every 2 hours and don't bother checking the temps fore at least 4 hours.

OK, so it's overkill and silly but they have 2 children and this ?may? give them something to smile about - - - and eat?

Man that looks real good. Fosters lager, lol, had a few cans of that stuff. I mainly drink Indian lager called kingfisher, man it's good. Hope you all enjoyed your t day.
